Ingredients:

  • 3 cups cooked shahi khana basmati rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp oil
  • 1 tbsp soy sauce
  • 1 tsp oyster sauce (optional)
  • Salt and pepper, to taste
  • 1/4 cup chopped scallions

Instructions:

  1. In a large skillet or wok, heat the oil over medium-high heat.
  2. Add the chopped onion and stir-fry for 1-2 minutes until the onion is soft and translucent.
  3. Add the minced garlic and grated ginger and stir-fry for another 30 seconds until fragrant.
  4. Add the mixed vegetables and stir-fry for 2-3 minutes until they are slightly softened.
  5. Move the vegetables to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked.
  6. Add the cooked rice to the pan and mix well with the vegetables and eggs.
  7. Add the soy sauce and oyster sauce (if using) and mix well. Add salt and pepper to taste.
  8. Stir-fry the rice for 5-7 minutes until it is heated through and slightly crispy.
  9. Garnish the fried rice with chopped scallions and serve hot. Enjoy!
