Ingredients:
- 3 cups cooked shahi khana basmati rice
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp oil
- 1 tbsp soy sauce
- 1 tsp oyster sauce (optional)
- Salt and pepper, to taste
- 1/4 cup chopped scallions
Instructions:
- In a large skillet or wok, heat the oil over medium-high heat.
- Add the chopped onion and stir-fry for 1-2 minutes until the onion is soft and translucent.
- Add the minced garlic and grated ginger and stir-fry for another 30 seconds until fragrant.
- Add the mixed vegetables and stir-fry for 2-3 minutes until they are slightly softened.
